Growing up in Southern Virginia, coleslaw was a dish that accompanied many of our meals. During the summer, when outdoor cookouts happened almost every weekend, you knew for a fact that there would be a coleslaw dish. As kids we’d guess which kind of coleslaw we’d have. Sometimes it was the standard Southern style variety and other times it was something new and unusual – depending on the cook. You might think that you just don’t have the time to put together a salad. Here’s a helpful hint: on your day off from work prepare small dishes of vegetables, sliced onions, ham and other salad ingredients and prepare one big dish of shredded lettuces. Then, all you have to do is take out the dishes – I like to use the plastic throwaway types with lids that you can get at your local grocery store – open the lids and grab from each dish, placing the ingredients in a bowl or larger portable plastic dish to take with you. It’s quick and easy!
